RBY OU commonly revolves around sleep, and Exeggutor's Sleep Powder and strong part-Psychic typing make it one of the more reliable sleepers in the metagame. One of Exeggutor's main issues is getting worn down and statused. Between trying to land Sleep Powder and checking attackers like Snorlax, Rhydon, and Jolteon, as well as a weakness to very common Ice-type attacks, Exeggutor will often expose itself to significant damage. Rest allows it to heal up and check these attackers repeatedly throughout the game. It even clears paralysis in the process, allowing Exeggutor to take Thunder Waves from the likes of Alakazam, Slowbro, Jolteon, and Blizzard-less Starmie and completely deny them from making any further progress. Using Rest gives Exeggutor, usually a rather offensive Pokemon, the ability to play a defensive role long-term; however, should these defensive duties be unneeded, it can always turn to Explosion to remain valuable in unfavorable conditions, ensuring that it is never deadweight.

I'd mention some specific matchups in which Rest can allow Exeggutor to become a hardwall to something that would otherwise chip it down and eventually force it to explode (Starmie without an Ice move, Rest Jolteon without Pin Missile and maybe even Alakazam or SToss Chansey).
