Due to its great Speed and typing, ability to beat Zapdos and Starmie, and high critical hit rate, this electrifying eeveelution has made a name for itself in RBY OU. Thunderbolt ensures solid damage on neutral targets and allows Jolteon to beat Water-types with ease. Double Kick hits Chansey and can even 2HKO it with critical hits. Thunder Wave cripples opposing Pokemon; most importantly, it allows Jolteon to limit Tauros's sweeping potential. Rest allows Jolteon to remove paralysis and outstall Chansey and Starmie without any STAB moves, but it gives the opponent opportunities to try and exert pressure with Snorlax or Tauros. Teammates such as Cloyster, which can check these threats, are appreciated; in return, Jolteon checks Zapdos. Overall, Jolteon makes for an appealing Pokemon due to it being the fastest Pokemon in the metagame, having the ability to revenge kill most Pokemon including Tauros, and possessing the combination of Thunderbolt + Double Kick, which only Exeggutor and Rhydon can safely switch into, but it is frail and vulnerable to status.

Content is mostly good but the wording / sentence flow is off in a few places, lemme try to straighten that up


Thunderbolt is its STAB move of choice which is able to ensure heavy damage on Starmie and outspeeding Tauros and threatening it with Thunder Wave or a straight revenge kill should it be already weakened.
Let's just forget about Tauros for a sec and talk about Thunderbolt first. I'd reword this section to something like this:
"Thunderbolt is its STAB move of choice, ensuring solid damage on neutral targets and allowing it to beat Water-types with ease."

Rhydon serves as a hardocunter against Jolteon, as the damage from Double Kick is quite underwhelming and forces Jolteon with the threat of an Earthquake out, therefore Exeggutor makes up for an amazing check against Rhydon as well as being able to check Tauros.
You're diving into match ups before finishing the explanation of the set itself; I'd keep this sort of comment for later on in the analysis. Additionally, there is quite a lot of nuance when you're teambuilding with Jolteon - you would think Jolt+Egg would be a good combo but in reality around 80% of Jolteon usage comes in teams without Exeggutor, for complicated reasons that we can't really explain in 1000 characters. I would remove this part altogether.

I'm not sure I would mention Starmie as a Tauros/Snorlax check; you don't want to switch it into Snorlax unless you have no other options, and against Tauros you have decent chances of getting crit/paralyzed to death. Mentioning only Cloyster would be most accurate.

You can use the remaining characters to add a summary of Jolteon's role if you want (something like fastest pokemon in OU gives it the ability to revengekill basically anything including tauros, thunderbolt+doublekick has no easy switchins outside of exeggutor/rhydon, high pressure vs water types, but it's very frail and vulnerable to status), but it's optional. Either way, if you want to add any of that sort of info do it all in one block at the end rather than mixing the information with the set details.

Implement all this and then I'll come back for the check
